From a previous review, we found that the Intel NUC6i7KYK NUC Kit is unable to connect to dual 4K@60hz displays using the Plugable Thunderbolt 3 Dual DisplayPort Adapter. As such, we tested with the Plugable Thunderbolt 3 Dual HDMI Adapter instead, but also verified that only one 4K HDMI display can be supported at a time.

Similarly, we plugged in the Plugable Thunderbolt 3 Dual HDMI Adapter into the NUC kit and approved the connected Thunderbolt device.

The Screen Resolution control panel only discovered one of the 4K displays that was connected to the Plugable Thunderbolt 3 Dual HDMI Adapter at a time.

After that we decided to remove one external display that was connected directly to the Intel NUC6i7KYK NUC Kit, to see if this can enable it to detect the dual 4K displays connected to the Dual HDMI Adapter. However, we still ended up seeing only one 4K display. 

This pretty much confirms that Thunderbolt 3 adapters like the Plugable Thunderbolt 3 Dual HDMI Adapter is unable to be used with the Intel NUC6i7KYK NUC Kit to display two 4K screens simultaneously.
