Apple has done a good job in making sure its HomeKit products like the Elgato Eve Room Sensor (2016) work well with its iPhones like the iPhone 6 Plus. The Elgato Eve Room Sensor (2016) is easy to set up on the iPhone 6 Plus which can also act as your HomeKit Hub so that you can remotely access and control your HomeKit devices.

To set up the Elgato Eve Room Sensor (2016), first go to the Home App which is pre-installed on your iPhone 6 Plus.

You will need to turn on Bluetooth on your phone to add the Elgato sensor, which it should immediately show up as 'Eve Room 4CC7'.

Once you select the Elgato sensor, the App will ask you to enter the 8 digit code on the packaging to start the pairing process.

Once the Elgato Eve Room Sensor (2016) and iPhone 6 Plus are successfully connected, you can now access the Elgato sensor on the Apple Home App to set up the names of the air quality, temperature, and humidity sensors.

Another way you can set up the Elgato Eve Room Sensor (2016) on your phone is through the Elgato Eve App which you can download from the Apple App Store.

Once the Eve App is installed, open up the App to Add an Accessory where you should be able to find and pair the Elgato sensor easily with your phone. The Eve App actually allows you to get more details (like graphs) on the measurements taken by the Elgato sensor compared to the Home App.
