Apple has always controlled the quality of its ecosystem through its proprietary digital Lightning connector so it's not surprising that with the Apple iPhone 7, the last non-directly Apple controlled analog interface, the 3.5 mm audio port, went the way of the dodo bird.  Now Apple can directly control one of the largest markets out there- audio headphones.

Most people will want to use their existing 3.5 mm audio headphones with the Apple iPhone 7 given their sheer ubiquity.  For that, Apple has the Apple Lightning to Headphone Jack which works with any iPhone, iPad, or iPod Touch that is running iOS 10.

If you don't want to worry about carrying around or losing another Apple adapter, Apple also has the Apple EarPods with Lightning Connector.  Like the Apple Lightning to Headphone Jack , the Apple EarPods with Lightning Connector also works with any iPhone, iPad, or iPod Touch that is running iOS 10.

If you don't mind having to charge yet another gadget, you can go wireless using wireless Bluetooth headphones like the Beats PowerBeats2 Wireless.  Of course, Apple also announced with more fanfare its Apple AirPods which is a complete rethink of how to use new technology to integrate a person's listening, speaking, and touch functions to better work with Siri (ala the Star Trek Ear Communicator) and simultaneously working with multiple Apple devices.  If you want to go with the Apple AirPods, it would be available until October 2016.

The 3.5 mm audio jack has been around for a while and made widely popular by the Sony Walkman.  Perhaps in a symbolic way, Apple is now showing it has the ability to hasten the demise of this audio jack despite its low cost and simplicity in return of a more controlled user experience and thinner phones.
